French Canadian Pea Soup
A Gluten Friendly Soup!

This traditional pea soup is the ultimate in French Canadian style comfort food! Look for an un-smoked ham hock in the meat department of your local supermarket. If you can't find one, a smoked ham hock will work too. Trim off and discard skin from ham hock.
Remember: Add Soup Base to Taste!
Bring 8 cups of cold water to a boil and add ham hock. Bring to boil; reduce heat, cover and simmer, stirring occasionally, until meat is falling off bone 30-40 minutes.
Add our French Canadian Soup Mix, let simmer and stirring frequently for 30 minutes. When ready, discard bay leaves. Transfer ham hock to plate; let cool enough to handle. Discarding bone and any fat, dice meat and return to soup; n blender, puree half of the soup; return to pot along with meat. heat through.
Garlic Toasts: (while ham hock is boiling) meanwhile, cut baguette into 12 slices; spread with butter. Broil until golden, about 2 minutes. Rub with garlic; sprinkle with salt. Serve with soup. Enjoy!
